Chocolate Coconut Energy Balls
Super easy, super healthy, super yummy - what more could one ask for?
Not only am I going to share my recipe, but I want to elaborate on why chocolate (the right kind) has SO many benefits!
Ingredients:

1 cup raw almonds
-
pinch of salt
-
1 tsp vanilla extract
-
1.5 cups Medjool dates
-
1/2 cup unsweetened cocoa powder
-
1/4 cup cacao nibs
-
A bowl of shredded coconut to roll balls in
Instructions:
-
Using a food processor, blend only the almond until they become a finer powder
-
Add salt and vanilla, blend again
-
Make sure your dates are pitted! I suggest cutting them in half before putting them in the processor
-
Add the cocoa powder and cacao nibs, blend it all together
-
Rolls into balls, cover in coconut, and enjoy!


GF + DF Oatmeal Chocolate Chip Cookies
Cozy on up & indulge!
Ingredients:

1 1/4 cup GF all-purpose flour
-
1/2 cup organic light brown sugar
-
1/2 cup sucanat sugar
-
1 tsp baking soda
-
1/2 tsp salt
-
1/2 tsp cinnamon
-
2 large eggs
-
1 tsp pure vanilla extract
-
1/2 cup melted coconut oil
-
2 cups GF oats
-
1 1/4 dairy free chocolate chips
Instructions:
-
Preheat oven to 350 F
-
In a large bowl, whisk together coconut oil, sugars, eggs, and vanilla
-
In a medium bowl, whisk together flour, baking soda, cinnamon, and salt
-
Combine dry ingredients with wet, then add oats and chocolate chips
-
Roll out balls onto baking sheet
-
Bake for 6 minutes (or until golden brown on edges)

Almond Flour Banana Muffins
I have had many attempts at creating banana muffins, but this one may just be my favorite! Gluten free, dairy free, and even grain free without the crumble topping
Something I love about these muffins is that they are so moist and packed with flavor - and just the perfect amount of sweetness!
Recipe:

3 mashed bananas
-
2 eggs
-
1/2 cup brown sugar
-
1/2 oat milk (or preferred non-dairy milk)
-
1/4 cup olive oil
-
1 tsp vanilla extract
-
2 cups almond flour
-
1 tsp baking soda
-
1/2 tsp baking powder
-
1/4 tsp salt
-
1 tsp cinnamon
-
1/2 cup gluten free oats
-
1 tsp raw organic sugar
-
pinch of salt
-
2 tbsp melted coconut oil
Instructions:
-
Preheat oven to 350 F
-
In a medium bowl, mix together dry ingredients
-
Sift almond flour, baking soda, baking powder, cinnamon, salt
-
In a large bowl, mix together wet ingredients
-
Mash 3 ripe bananas, add milk, oil, brown sugar, eggs, and vanilla extract
-
Fold dry ingredients slowly into wet ingredients
-
Grease muffins tins, fill about 2/3 the way with batter
-
CRUMBLE TOPPING OPTIONAL

In a small bowl, mix together oats, sugar, salt, and coconut oil - sprinkle on top of muffin batter in muffin tin
-
Bake muffins for 12-15 minutes or until baked through (test with toothpick)


3 Ingredient Banana Pancakes
Easy 3 ingredient banana pancake recipe! Gluten free, dairy free, and grain free. I love carbs like no one else, but it's important to find a balance that works best for you; for me, these fully satisfy that carb craving without any of the carbs!
Ingredients:

1 mooshed banana
-
one egg
-
a dash of pure vanilla extract
Voila! That's it - easy peasy, and oh so delicious. My favorite toppings are blueberries, cinnamon, and good ol' VT maple syrup. Enjoy!
French Toast with a Twist
Anything that has to do with toast, I'm all in. Especially french toast. As much as I love maple syrup (I mean lick the plate until I get the last drop), I figured I'd mix it up! Love the combo of berries and nut butters? Then this is the french toast for you.
Ingredients:

GF bread (I used Abigail's)
-
Milk of choice (I used hemp)
-
1 egg
-
1 tbsp coconut sugar
-
Dash of vanilla extract
-
Dash of nutmeg
-
Favorite nut butter (I used almond)
-
Blueberries
-
Ghee
Instructions:
-
Whisk together milk, egg, coconut sugar, vanilla, and nutmeg
-
Soak bread and place in a pan at medium-low heat with ghee
-
Cook both sides until golden brown
-
In a separate pan, on a low heat, stir around blueberries with ghee until they begin to burst
-
Top toast with nut butter, berries, and extra cinnamon


Apple Chai Spice Loaf
Hint: pan fry in vegan butter of choice and sprinkle cinnamon on top... DE-licious!
Ingredients:

1 1/4 cup unsweetened applesauce
-
1/3 cup melted vegan butter (let cool a bit)
-
2 eggs
-
1/4 cup Tazo Chai
-
1/2 tsp vanilla extract
-
1/3 cup cane sugar
-
1 1/2 cup GF all-purpose flour
-
1/2 tsp baking powder
-
1 tsp baking soda
-
1 1/2 tsp cinnamon
-
1/4 tsp salt
Instructions:
-
Preheat oven to 350 F
-
Whisk together applesauce, sugar, vanilla, and chai
-
Add in melted butter and eggs
-
In a separate bowl, mix together flour, baking powder, baking soda, cinnamon, and salt
-
Grease baking pan with coconut oil, fill 3/4 the way
-
Sprinkle sugar and cinnamon on loaf before putting on oven
-
Bake for 45 min to 1 hour
Brown Sugar Pumpkin Spice Loaf
The perfect balance of texture and flavor; tastes like autumn.
Ingredients:

1 3/4 cups GF all-purpose flour
-
1/2 cup organic cane sugar
-
1/2 cup brown sugar
-
1/2 tsp salt
-
1 tsp baking powder
-
1/2 tsp baking soda
-
2 tsp pumpkin spice
-
2 eggs
-
3/4 can organic pumpkin puree
-
1/2 cup melted vegan butter
-
1 tsp pure vanilla extract
Instructions:

Preheat oven to 350 F
-
In one bowl, combine wet ingredients (cane sugar, brown sugar, pumpkin puree, eggs, melted vegan butter, vanilla extract)

In a separate bowl, combine dry ingredients (flour, salt, baking powder, baking soda, pumpkin spice)

Mix together dry and wet ingredients

Spray 3 mini loaf pans with coconut oil
-
Fill pans 3/4 way and sprinkle with brown sugar

Bake for 30-35 minutes


The Best Banana Bread Ever
Truly ain't nothing like it. The delicate balance of flavor and texture tickles the tastebuds with absolute joy.
Ingredients:

3 ripe bananas
-
1/2 organic cane sugar
-
1/2 cup brown sugar
-
3 eggs
-
1/4 cup melted vegan butter
-
1/4 cup extra virgin olive oil (EVOO)
-
1 tsp pure vanilla extract
-
1 1/2 cups GF all-purpose flour
-
1/2 tsp salt
-
1 tsp baking powder
-
1/2 tsp baking soda
-
2 tbsp cinnamon
Instructions:
-
Preheat oven to 350 F
-
In one bowl, combine wet ingredients (cane sugar, brown sugar, mashed banana, eggs, melted vegan butter, vanilla extract)
-
In a separate bowl, combine dry ingredients (flour, salt, baking powder, baking soda, cinnamon)
-
Mix together dry and wet ingredients
-
Spray bread loaf pan with coconut oil
-
Fill pans 3/4 way, add sliced banana to top of mixture, complete with sprinkled cinnamon & sugar
-
Bake for 45 minutes, finish with broil at 500 F for 2 minutes
